This is a washed process coffee from the Sierra Azul cooperative in the Chiapas region of Mexico, that consists of approximately 200 smallholder farms. Nestled within the Truinfo Biosphere Reserve, coffee farms thrive from the surrounding biodiversity and healthy ecological symbiosis within the mountainous landscape.
Sierra Azul cooperative has maintained a strong community by creating programs and providing support for its members, while ensuring high quality with protocols and parameters in place.

While we have carried a decaf Mexico and a funkier anaerobic natural Mexico, this is the first longer release, washed process Mexico we have carried. This coffee is a great showcasing of a chocolatey yet balanced brightness of this region. We have sourced this coffee in partnership with Cereza Coffee, and it is certified fair trade & organic.

This natural processed coffee is different than other naturals we’ve carried recently. One might even say refreshing with it’s bubbly, grapefruit seltzer note. With a full body, this coffee is balanced with notes of syrupy molasses, black cherry, and grapefruit seltzer.

After a meticulous coffee selection process, eliminating under and over-ripe cherries, Yinyini uses a hydrothermic separation technique that removes lower-density floaters. Ripe cherries are then sealed in anaerobic grainpro bags for fermentation before they are dried on raised beds. The drying process involves an initial sun drying phase, followed by purposeful shading to prevent direct sunlight and high heat to damage the cherries. The level of care and precision in this drying process results in coffee with unique flavor and exceptional quality.

Yinyini started working on his family’s coffee farm at the age of 13. He learned the way of coffee farming from his father, and now shares the experience with his wife and son. He harnesses tall shade trees and regular pruning to promote soil health, moisture retention, and balance. Meticulous attention to pruning and cleaning, and additions of organic fertilizers like chicken manure promote a healthy ecosystem at Yinyini’s farm - all reasons his farm produces coffee of exceptional quality.

Beyond the mechanics of coffee farming itself, Yinyini loves to collaborate with his community by sharing his knowledge of sustainable coffee farming with other farmers. He loves to provide employment opportunities at his farm, and experiment with different processing methods. When he isn’t farming or drinking coffee, Yinyini cherishes time with his family and playing soccer.

We are excited to offer our first coffee from Tanzania here at Farm Loop Coffee. We chose this coffee because of it’s balanced brightness, unique black tea note, and it’s focus on gender equality. This coffee will shine in filter brews! Read more below from our sourcing partners, Genuine Origin, about this coffee:

In Swahili, usawa means balance and kahawa means coffee. The Usawa Kahawa Project is all about gender equality, and was established in 2021 by Taylor Winch, Genuine Origin’s sister company in Tanzania. The project’s goal is to make sure women are involved in farming coffee and bringing it to market. Its two main pillars are 1) empowering gender champions and gender action learning systems and 2) growing coffee production in Tanzania through training women and establishing new farms.

 The project works with the Hezya Agricultural Marketing Cooperative Society (AMCOS) in the Mbozi region of Tanzania. AMCOS manage 95% of the country’s coffee production, and smallholders must be registered to an AMCOS to qualify for support in production, processing, storage, transport, marketing, and government aid. Without membership, their raw green coffee would have no way of reaching the global market.

 The Hezya AMCOS that produced this lot is made up of nearly 300 smallholders with <1 hectare farms at altitudes ranging from 1590 to 1670masl. Their annual production volume is 64 metric tons, and they mainly focus on growing Bourbon, N39, Kent, and other local varieties.

 In addition to agricultural training, the producers who are part of the Usawa Kahawa Project are also trained on the importance of gender equity within the family for coffee production and distribution of finances. Much of the training is led by gender champions who live within the AMCOS communities. Within the Hezya AMCOS, gender champions initiated the Shamba Darasa Model Farm to showcase better agricultural practices and lead by example.
