This coffee comes from the Gigesa washing station, in the town of Gigesa in the Guji zone of Ethiopia. The Gigesa washing station collects coffee cherries from over 500 coffee growers in the area, each with 2-5 hectares of farmland. The Gigesa washing station holds NOP and EU Organic certification.

Once coffee cherries are delivered to the washing station, they are immediately depulped then rested in fermentation tanks for 36 to 48 hours to break down the mucilage. The mucilage is then fully removed through a final washing of the coffee in canals. The coffee is then dried on raised beds for 10-12 days.

The Yonis family owns and operates the Gigesa washing station. Farm Loop Coffee purchased this coffee from Hacea Coffee Source, which directly trades with the Yonis family. They have been working with them since 2015, and that is something at FLC that we love to see and support.

This washed coffee has a nice balance of syrupy peach, baking spice notes such as nutmeg, and a toffee - nutty sweetness. As the coffee cools, more acidity resembling lime will come out.
